Learning Objectives

By the end of this chapter students should be able to:

  • Describe how vitamins and minerals are classified.
  • Compare vitamin and mineral absorption.
  • Discuss how food and supplements provide micronutrients.

Micronutrients include vitamins and minerals, which are needed in smaller amounts. While they do not provide us with energy, micronutrients assist in energy metabolism and numerous bodily functions.
